Anyone know how to move the default FTdata location
without manually editing the registry so that one doesn't
have to use the PATH statement on every catalog created?

According to BOL you configure the default location of your full text catalog at setup. I can't confirm this right now, but perhaps a way to do this without changing registry entries is to remove SQL FTS and then re-install it picking a different default catalog location.
