First off, you say point it to create reports from a SQL Server 2000
database. If you mean the data from the reports come from SQL Server 2000
then data can come from almost anywhere (SQL Server 2000, 2005, Sybase,
Oracle etc). If you mean, that RS 2005 uses SQL Server 2000 as it's object
store/metadata the answer is also yes with one caveat. Wherever you have RS
2005 installed it needs a SQL Server 2005 license. So if it is on another
box, that box needs the license. This is true regardless of whether the
database used is 2000 or 2005.

I am currently running this configuration (RS 2005 using SQL Server 2000 at
its metadata/object store). It is fully supported configuration.
