How do I enumerate the running AppDomains in another process, given the
PID of that process?

....I think I need to convert an instance of ICorPublishAppDomain to
System.AppDomain...is there a way?

No, you need to download "mdbg" (see Mike Stall's Blog), build it and and
use the corapi managed wrapper ICorPublish as explained in the Blog.
