visual studio .net enterprise tools:
Seems there are only 4 alerts that are setup out of the box with Team System.
Of those 4, I really don't need any of them. What I do need is an alert
email to be fired when a work item is changed, a bug is added, etc..

Is this possible, if so, can someone explain the steps?

This alerts you say are the 4 avaliable via the IDE, but, you have
bissubscribe.exe tool, and there are more events avaliable, and also you can
create your custom events.

Look for info on that tool, and also check Visual Studio 2005 SDK.

You can also find which events are avaliable out-of-the-box, looking in
directory: "%program files%\Microsoft Visual Studio 2005 Team Foundation
Server\Web Services\Services\v1.0\Transforms" on the TFS, you can take a look
on the Xml to find which info publishes each event (the Xml files) and on the
Xsl to change the template of email notifications
