visual studio .net setup:
We have totally switched over to VS 2005 - therefore no longer do we
need VS 2003 and want to remove it. (yea, I know it doesn't hurt
anything to keep it there but why waste disk space?)

Therefore, is there an article or anything anywhere that describes
exactly what we need to remove and in what order to deinstall Visual
Studio 2003? And do it in such a way as to not disturb VS 2005?

Not an article, but I've done the following successfully (YMMV, of course).

Remove (from Add or Remove Programs)
MSDN Library - (your latest update month and year) mine says April 2003
(original date)
Note: the help for VS 2005 is listed as "MSDN Library for Visual Studio
2005.

Microsoft Visual Studio .NET (your edition) 2003 -(your language) mine says
Professional 2003 - English

Microsoft Visual J# .NET Redistributable Package 1.1

Microsoft .NET Compact Framework 1.0 SP3 Developer

I did not remove .NET Framework v1.1, but if you do, it would be last. Note:
the sizes reported for .NET Framework 1.1 and the hotfix are grossly
inaccurate here, showing 1,169.00 MB and 1.164.00 MB respectively, while 2.0
shows 200 MB. So removing the 1.1 Framework will not save you much space and
*may* break something.
