My ancient version has worked just fine until now:
Suddenly I am unable to switch symbols. I'll make a new keyframe and try to
insert the new symbol, but in only inserts the old one as the last instance
used. What's going on??

One file in particular or all files ?
If one than you corrupted your file.
It can happen , did to many people , even tho the timeline is cleared
and all is done from scratch the problem remain , if run in the same FLA
but not if run in new one . Once the file get corrupted it's better
to start rebuilding, usually they don't get any better :)
