We are creating a CD-ROM that installs the Flash projector and related files
onto the user's machine. However, I can't seem to find a way in Flash to
change the default icon. I thought surely this was located in the Publishing
settings, but no dice.

Any ideas? I'm assuming there's something simple I'm overlooking...

Use a free program like Resource Hacker to change the icon in the projector.
A quick search for it should find it at download.com

You don't need a third party projector tool just to change the icon (in case
someone suggests you do).
