iis ftp: i have my default webfolder/ftp folder on a seperate server on network - can
i share these folders for web access only (without file sharing on the
network)?

i've shared both at the moment - but i dont really want the rest of the
network to access it for file sharing

Yes, for any web or ftp virtual directories, you don't know make it a
network share.
how do you create the 'directory' ? try use the IIS MMC and create the
virtual directory.
