What's best fields to log for Virtual SMTP logging?

iis smtp nntp: I want to set up logging on my new virtual SMTP server so i can check the
reliablity of the server. This is so when my boss tells me there is a
problem because someone hasn't received the email he sent them i can pinpoint
the problem and check the logs of the SMTP server.

What are the best fields to log to help me with this?

Log everything. If you find you never need something, discontinue
logging, but it's netter to have too much. Use your analysis tools to
select the data you need to report on.
